Si vous me suivez sur Instagram, vous avez sans doute aperçu mes story et mes posts sur un chouette voyage de presse au pays des haricots tarbais.
En effet, nous étions plusieurs blogueurs à avoir été invité à découvrir cette légumineuse. Une plante grimpante qui pousse soit sur le maïs, ou bien sur filet. Le haricot tarbais est vendu la plupart du temps en sec, mais on trouve quelques recettes cuisinées en pots à la vente, nos préférés à la maison sont les versions « légumes du soleil » et « Truite aux haricots tarbais » que vous pouvez commander sur la boutique en ligne. Le haricot tarbais est une excellente légumineuse aussi bien pour la santé puisqu’il est riche en vitamines en fer, en fibre, mais aussi pour son goût très discret.

Les haricots tarbais en sucré et en salé
Je vous ai mis quelques photos ci-dessous de notre après-midi dans les champs.
Après cette belle journée, quoi de mieux que de penser à déguster le haricot tarbais, à l’Etable Gourmande, à Lanne, proche de Tarbes.
Un restaurant créé par quatre copains agriculteurs . Christophe pour le veau, Julien producteur de bœuf, poulets, haricots tarbais, Gérald le bœuf et le miel et Sylvain les légumes. L’Étable gourmande se situe au cœur du village de Lanne, en périphérie de Tarbes, à la campagne. Le restaurant est composé de deux parties, dès l’entrée on trouve un coin façon « bistrot » avec de grandes tables en bois et un bar , et le restaurant.
Sur leur carte on retrouve les produits des quatre associés, mais aussi les produits d’autres producteurs de la région. Tout y est fait maison, de l’entrée au dessert. Le menu du jour est à 14 € (entrée, plat, dessert) , leur spécialité est la côte de boeuf , on voit d’ailleurs dans le restaurant l’armoire à maturation.
Samedi soir, nous avons donc pu déguster le haricot tarbais tout au long du repas, concocté par le Chef Rémi Lagarrue.
Une jolie petite adresse à retenir près de Tarbes, on s’est régalé avec de bons produits locaux comme on aime.

Je ne mange pas souvent ce genre de haricot, par flemme de le cuisiner parce que j’adore ça! Par contre, je ne l’imaginais pas en version sucrée!
On le mange en salade dite grecque avec des oignons, des tomates, du persil, du thon et un filet d’huile d’olive c’est excellent :-)
Alors ça, je n’aurai jamais pensé à le cuisiner en version sucrée ! Belle surprise !
ah cool je ne connaissais pas ce haricot et j’adore le fait de le cuisiner de l’entrée au dessert !
